Let's explore the true core of Cretan Gastronomy: Bread & Olive Oil. Biolea Chefs outside the kitchen seek the simplicity of the fire. The smell of sourdough bread in the wood-fired oven, exploring our land, seasonality and traditional sustainable way of village life. Our guests will learn all the secrets of cooking with olive oil and have the chance to discover flavors of the past while at the same time "taming them” through modern techniques.
We welcome our guests with a glass of wine, tour of our olive mill and of course an olive oil tasting. During the cooking class we will make and explore the art of sourdough and then create various traditional recipes from it. such as cheese pies, traditional "lagana" bread, and Cretan version of pizza "ladenia" . We will explore different ways olive oil can highlight dishes such as marinating, poaching, baking & frying and do so in traditional ways such as cooking in wood-fired oven and frying in olive oil on open flame.
